Your mix didn’t call for an egg? If you’re using a half cup of mix instead of the 1 cup , I guess to make one pancake instead of the whole recipe, the pan might be too big. You could do the hole of what was called for with the egg in the 8 inch round cake pan and see what happens, reheating later the portion you didn’t eat.
