  problem solved. To ensure the speech output works while recording you have to connect and disconnect the sound card a couple of times, then, when recording a ramble, make sure that the iPhone stereo microphones is switched off. Then it will accept stereo input from the sound card. So in the future, I'll have to find more stereo content.
