The most common culprit is the high-voltage relay or transformer energizing. When you hit start, a relay snaps closed to send power to the magnetron, and the transformer draws a big surge of current in that first instant. Depending on exactly where the AC power happens to be in its cycle at the moment the relay closes, that inrush can be big or small — which is exactly why it pops loudly sometimes and barely at all other times. It's random timing, not a fault. Nothing to worry about.

But why does this happen to some microwaves and not others? Anything I can do to prevent this or no

I think it’s the microwave plate that isn’t set properly and makes an adjustment when it starts to move

It could possibly be the medal expanding and contracting maybe? But if your not smelling any smoke or burning or seeing any electrical burns on the wire or outlet area, then you should be fine.
