Great stuff. It's so much easier to do, and you can bulk cook. I'll do 8 patties with seasoning and go from there. You know what's fun as a seasoning? Those French onion soup packets. You'll want to mix one packet per about 2 lbs of beef so it's not too overpowering. But they turn out fantastic!

I'm definitely going to have to try that. Thanks for the tip.

Another tip is to freeze the burgers for an hour or 2 prior, let the foil/parchment paper pan heat up in the oven, then put the frozen patties on. It really will minimize meet shrinkage. If you've never visited, I highly recommend seriouseats content. Their contributors don't just give you recipes, they give you the origin story as well as the science/chemistry behind some cooking methodologies. Kenji Lovez-Alt and his team are amazing resource for culinary geeks.🧑🍳🍲

If only I planned far enough ahead to do that. I was so hungry that I took the ground beef out of the deep freezer and thawed it under hot water so I could make my burgers faster and didn't have to wait for it to thaw at room temp. Lol.
