Resting the meet allows the juices to distribute evenly throughout the meat. The temperature may also rise a couple of degrees in the first little bit, but the most important benefits lie in flavor and texture. I always let the pork rest for at least an hour. However, if it's ready to come off the smoker a bit earlier than expected, you can let it rest for up to 4 hours if necessary.
