I just double tapped the record button to start recording and double tapped the stop button to stop recording. That's how you lock the button. Apparently double tap and hold is sort of like a quick PTT, or push to talk.

There doesn't seem to be a way to lock them though. I just click the button on its own. Would be nice to have a global input microphone setting though.
