Problem with those methods is no direct sound.

To record phones, provided I don't have an interface, I always use tools like SCRCPY.

Yes, screen recording works, but there are a few problems with it. You can capture full stereo sound if the microphone is off but when you turn the microphone on, either the sound gets collapsed to mono or the sounds actually get muted, as in the case of Dice World. I’m looking for a way to record voice and stereo sound. iOS rules kind of make that impossible.

If on PC, use something like OBS or Virtual Recorder. If on iOS, use screen recording and then save that video to files. Go to your web browser, visit https://onlineconverter.com/video-to-mp3 and upload your file. Hit Convert and download the audio file.
